Massive New Venue to Serve Cocktails in Water Coolers

“The mammoth operation is divided into several sections, including a 8,000 square-foot patio that connects to the 5,000 square-foot bar and restaurant with a long wooden bar, leather chairs, custom chandeliers, and ceilings 40 feet high. A second floor overlooking the 10,000 square-foot event space features art deco-style steel panels and a 40-foot marble bar, touches that pay homage to the building’s pre-1920’s origins.

The menu from Michael Taus (Charlie Trotter’s, Zealous, and Taus Authentic) will be laden with gourmet pub fare featuring ingredients from local purveyors. Thirsty customers can try cocktails and large-format drinks served table side from water coolers, or select a “kickback,” or mixed shot — a not-so-subtle jab at Chicago’s storied political machine — which can be purchased individually or in a flight. The beer selection emphasizes Chicago breweries, and promises eight local beers available on tap, in addition to cans and bottles. The wine list, however, takes a global approach and features wines from 15 countries.”
